Ingredients:
- 1 onion, thinly sliced
- 2 eggs
- 8 oz pasta of your choice
- 2 large tomatoes, diced
- 2 cloves of garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until they are soft and translucent, about 5-7 minutes.
3. Add the minced garlic to the skillet and cook for another minute until fragrant.
4. Add the diced tomatoes to the skillet and season with salt and pepper. Cook for about 10-15 minutes until the tomatoes have softened and released their juices.
5. In a separate non-stick skillet, fry the eggs to your desired doneness.
