Recipe Name: Tomato and Onion Pasta with Poached Eggs

Ingredients:
- 8 oz pasta of your choice
- 1 large onion, thinly sliced
- 2-3 ripe tomatoes, diced
- 4 eggs
- 2 tbsp olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)

Instructions:

1. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.

3. Add the diced tomatoes to the skillet and cook for another 5 minutes, until the tomatoes have softened and released their juices.

4. Season the tomato and onion mixture with salt and pepper to taste.

5. Create four wells in the tomato and onion mixture and crack an egg into each well. Cover the skillet and let the eggs poach for about 5-7 minutes, or until the whites are set but the yolks are still runny.

6. Divide the cooked pasta onto plates and top each serving with the tomato and onion mixture with a poached egg on top.

7. Sprinkle with grated Parmesan cheese if desired and serve immediately.
