Recipe Name: Tomato and Onion Pasta with Poached Eggs

Ingredients:
- 1 onion, finely chopped
- 2 eggs
- 8 oz pasta of your choice
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)

Instructions:

1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant.

3. Add the diced tomatoes to the skillet and cook until they start to soften, about 5 minutes.

4. Season the tomato and onion mixture with salt and pepper to taste.

5. Create two wells in the tomato and onion mixture and crack an egg into each well. Cover the skillet and let the eggs poach until the whites are set but the yolks are still runny, about 5-7 minutes.

6. Once the eggs are cooked to your liking, carefully transfer the pasta to the skillet and toss everything together until well combined.
