Tomato and Potato Egg Scramble
Ingredients:
- 2 eggs
- 1 tomato, diced
- 1 potato, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced potato and cook for 5 minutes, stirring occasionally.
3. Add the diced tomato and cook for an additional 3 minutes.
4. Crack the eggs into the skillet and scramble with the vegetables.
5. Season with salt and pepper to taste.
6. Cook until the eggs are cooked through, about 3-5 minutes.
7. Serve warm. Enjoy!
