Tomato and Shrimp Stir-Fry with Leeks
Ingredients:
- 2 tablespoons olive oil
- 1 large leek, thinly sliced
- 1 pound shrimp, peeled and deveined
- 2 cloves garlic, minced
- 2 large tomatoes, diced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the leek and cook until softened, about 5 minutes.
3. Add the shrimp and garlic and cook until the shrimp is just cooked through, about 3 minutes.
4. Add the tomatoes, oregano, salt, and pepper and cook until the tomatoes are softened, about 5 minutes.
5. Stir in the parsley and serve.
