Tomato Cabbage Rice Stir-Fry

Ingredients:
- 1 cup rice
- 1 small cabbage, shredded
- 2 tomatoes, diced
- 1 onion, sliced
- 2 carrots, julienned
- 2 green chilies, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- Handful of fresh coriander leaves, chopped
- Salt to taste
- 1 tablespoon oil

Instructions:
1. Cook the rice according to package instructions and set aside.
2. Heat oil in a large pan or wok over medium heat.
3. Add the sliced onions and sauté until translucent.
4. Add the minced garlic and grated ginger, and sauté for another minute until fragrant.
5. Add the diced tomatoes and cook until they start to soften.
6. Toss in the julienned carrots and shredded cabbage, and stir-fry for a few minutes until the vegetables are slightly tender.
7. Add the green chilies and mix well.
8. Season with salt to taste and stir in the cooked rice.
9. Mix everything together until well combined.
10. Finally, sprinkle the chopped coriander leaves on top and give it a final stir.
11. Remove from heat and serve hot.
