Make Tomato Chicken and Rice
Tomato Chicken and Rice
Ingredients:
- 2 chicken breasts, cut into cubes
- 2 cups of white rice
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of diced tomatoes
- 2 cups of chicken broth
- 1 teaspoon of oregano
- 1 teaspoon of basil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion and garlic and cook for another 2 minutes.
4. Add the rice and stir to combine.
5. Add the tomatoes, chicken broth, oregano, basil, salt, and pepper.
6. Bring to a boil, then reduce the heat to low and cover.
7. Simmer for 20 minutes, or until the rice is cooked through.
8. Serve hot. Enjoy!
