Tomato Chicken and Rice

Ingredients:

- 2 chicken breasts, cubed
- 2 cups cooked white rice
- 2 medium tomatoes, diced
- 2 potatoes, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add chicken cubes and cook until lightly browned, about 5 minutes.

4. Add garlic, oregano, salt, and pepper and cook for an additional minute.

5. Add tomatoes and potatoes and cook for an additional 5 minutes.

6. Transfer mixture to a 9x13 inch baking dish.

7. Top with cooked rice and spread evenly.

8. Bake in preheated oven for 25 minutes, or until chicken is cooked through and potatoes are tender.

9. Serve hot. Enjoy!
