Make Tomato Chicken Rice

Recipe Name: Tomato Chicken Rice

Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons olive oil
- Fresh parsley for garnish

Instructions:
1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
2. Add the chicken pieces to the skillet and cook until browned on all sides.
3. Stir in the paprika, cumin, salt, and pepper, and cook for another minute.
4. Add the rice to the skillet and stir to coat the grains with the spices.
5. Pour in the diced tomatoes and chicken broth, and bring to a simmer.
6. Cover the skillet with a lid and reduce the heat to low. Let the mixture cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
7. Once the rice is cooked, fluff it with a fork and adjust seasoning if needed.
8. Serve the tomato chicken rice hot, garnished with fresh parsley.
