Tomato Chicken Stir Fry
Ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 large tomato, diced
- 1 large carrot, julienned
- 1 pound chicken breast, cut into cubes
- 2 eggs, lightly beaten
- Salt and pepper, to taste
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic and sauté for 1 minute.
3. Add the tomato and carrot and cook for 2 minutes.
4. Add the chicken and cook for 5 minutes, stirring occasionally.
5. Push the chicken and vegetables to the side of the skillet and pour in the eggs.
6. Scramble the eggs until cooked through.
7. Mix the chicken and vegetables with the eggs and season with salt and pepper.
8. Serve hot.
