Make Tomato Fried Rice

Tomato Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 1 tomato, diced
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced tomato and cook for 3-4 minutes, stirring occasionally.

3. Add the cooked rice and stir to combine.

4. Push the rice to the side of the pan and crack the eggs into the center.

5. Scramble the eggs until they are cooked through.

6. Mix the eggs and rice together and season with salt and pepper.

7. Serve hot. Enjoy!
