Tomato Garlic Parsley Pasta
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 large tomatoes, diced
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 8 ounces of your favorite pasta
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute.
3. Add the tomatoes, parsley, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until the tomatoes are softened.
4. Drain the cooked pasta and add it to the skillet with the tomato mixture. Stir to combine.
5. Serve the pasta warm. Enjoy!
