Ingredients:
- 1 cup rice
- 2 tomatoes, diced
- 1 teaspoon salt
- 3 cloves garlic, minced
- 1/2 teaspoon pepper
- 1 onion, chopped
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
3. Add the diced tomatoes to the pot and cook until they start to break down and release their juices.
4. Stir in the rice, salt, and pepper. Mix well to combine all the ingredients.
5. Add enough water to cover the rice by about an inch. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
