Tomato, Gruyère and Eggplant Gratin

Ingredients:

-2 large tomatoes, sliced
-1 large eggplant, sliced
-1 cup Gruyère cheese, grated
-1 cup whole milk
-2 tablespoons butter
-2 tablespoons all-purpose flour
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Grease a 9x13 inch baking dish with butter.

3. Layer the tomato slices in the bottom of the dish.

4. Top with the eggplant slices.

5. Sprinkle the Gruyère cheese over the top.

6. In a small saucepan, melt the butter over medium heat.

7. Add the flour and whisk together until combined.

8. Slowly add the milk, whisking constantly until the mixture is smooth.

9. Pour the milk mixture over the vegetables and cheese.

10. Sprinkle with salt and pepper, to taste.

11. Bake for 30-35 minutes, or until the top is golden brown and bubbly.

12. Serve warm. Enjoy!
