Tomato Mackerel Fried Rice
Ingredients:
- 2 cups cooked white rice
- 2 large tomatoes, diced
- 2 tablespoons vegetable oil
- 2 mackerel fish fillets, diced
- 2 tablespoons Maggi seasoning
- 2 eggs, lightly beaten
- Salt to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the mackerel fish and cook for 3-4 minutes, stirring occasionally.
3. Add the diced tomatoes and cook for an additional 2 minutes.
4. Add the cooked rice and Maggi seasoning and stir to combine.
5. Push the rice mixture to the side of the pan and pour in the beaten eggs. Scramble the eggs until cooked through.
6. Mix the eggs into the rice mixture and season with salt to taste.
7. Cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through.
8. Serve the Tomato Mackerel Fried Rice warm. Enjoy!
