Tomato Mozzarella Potato Gratin

Ingredients:

- 2 large tomatoes, sliced
- 2 large potatoes, thinly sliced
- 2 large carrots, peeled and thinly sliced
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup corn kernels
- 1/2 cup heavy cream
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Grease a 9x13 inch baking dish with butter or cooking spray.

3. Arrange the tomato slices in the bottom of the baking dish.

4. Layer the potatoes and carrots on top of the tomatoes.

5. Sprinkle the mozzarella and cheddar cheese over the vegetables.

6. Sprinkle the corn kernels over the cheese.

7. Pour the cream over the top of the gratin.

8. Sprinkle with salt and pepper.

9. Bake for 40-45 minutes, or until the potatoes are tender and the cheese is melted and golden.

10. Let cool for 10 minutes before serving. Enjoy!
