Tomato Mozzarella Rice Bake

Ingredients:

- 2 cups cooked white rice
- 2 large carrots, diced
- 2 large tomatoes, diced
- 2 cups diced mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 eggs, lightly beaten
- 1/2 cup plain yogurt
- 1/2 cup heavy cream
- 1/2 cup cooked sweet potatoes, diced
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Grease a 9x13 inch baking dish with butter or cooking spray.

3. In a large bowl, combine the cooked rice, carrots, tomatoes, mozzarella cheese, Parmesan cheese, eggs, yogurt, cream, and sweet potatoes. Season with salt and pepper.

4. Pour the mixture into the prepared baking dish and spread it out evenly.

5. Bake for 25-30 minutes, or until the top is golden brown and the cheese is melted.

6. Let cool for 5 minutes before serving. Enjoy!
