Make Tomato Rice

Tomato Rice

Ingredients:

- 2 cups of long-grain white rice

- 2 tablespoons of olive oil

- 2 cloves of garlic, minced

- 2 large tomatoes, diced

- 2 cups of vegetable broth

- 1 teaspoon of dried oregano

- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large saucepan over medium heat.

2. Add the garlic and cook for 1 minute.

3. Add the rice and stir to combine.

4. Add the tomatoes, vegetable broth, oregano, salt, and pepper.

5. Bring the mixture to a boil, then reduce the heat to low and cover.

6. Simmer for 20 minutes, or until the rice is cooked through.

7. Serve hot. Enjoy!
