Make Tomato Rice

Recipe Name: Tomato Rice

Ingredients:
- 1 cup rice
- 2 tomatoes, chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 cups water
- 2 tbsp oil
- Fresh coriander leaves for garnish

Step by Step Guide:
1. Wash the rice thoroughly and soak it in water for 15-20 minutes.
2. In a pan, heat oil over medium heat and add cumin seeds. Let them splutter.
3. Add the chopped onions and garlic. Saute until the onions turn translucent.
4. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and mushy.
5. Drain the soaked rice and add it to the pan. Mix well with the tomato mixture.
6. Add 2 cups of water and bring it to a boil. Reduce the heat to low, cover the pan with a lid, and let it cook for 15-20 minutes or until the rice is cooked and water is absorbed.
7. Once the rice is cooked, fluff it with a fork and garnish with fresh coriander leaves.
8. Serve hot with raita or any side dish of your choice.
