Tomato Rice and Egg
Ingredients:
- 1 cup uncooked rice
- 2 eggs
- 1 tomato, diced
- 1 potato, diced
- 1 chili, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced potato and chili and cook for 5 minutes, stirring occasionally.
3. Add the diced tomato and cook for an additional 3 minutes.
4. Add the uncooked rice and stir to combine.
5. Add 2 cups of water and bring to a boil.
6. Reduce heat to low and cover the skillet. Simmer for 15 minutes.
7. Crack the eggs into the skillet and stir to combine.
8. Cover the skillet and cook for an additional 5 minutes, or until the eggs are cooked through.
9. Season with salt and pepper to taste.
10. Serve warm. Enjoy!
