Tomato Rice and Potato Casserole
Ingredients:
- 2 cups of cooked white rice
- 2 large potatoes, peeled and diced
- 2 large tomatoes, diced
- 1/2 cup of grated cheese
- 1/4 cup of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine the cooked rice, potatoes, tomatoes, cheese, olive oil, garlic powder, onion powder, oregano, salt and pepper. Mix until all ingredients are evenly distributed.
3. Grease a 9x13 inch baking dish with cooking spray.
4. Pour the rice and potato mixture into the baking dish and spread it out evenly.
5. Bake in preheated oven for 30 minutes, or until potatoes are tender.
6. Remove from oven and let cool for 10 minutes before serving. Enjoy!
