Tomato Rice and Potato Salad
Ingredients:
- 2 cups cooked white rice
- 2 cups cooked potatoes, diced
- 2 tomatoes, diced
- 1 cucumber, diced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked rice, potatoes, tomatoes, and cucumber.
2. In a small saucepan, melt the butter over medium heat.
3. Pour the melted butter over the rice mixture and stir to combine.
4. Season with salt and pepper to taste.
5. Serve the salad warm or chilled. Enjoy!
