Tomato-Rice Fish
Ingredients:
-1 pound of fish fillets
-1 cup of long grain white rice
-2 cups of diced tomatoes
-1/4 cup of olive oil
-1 teaspoon of garlic powder
-1 teaspoon of onion powder
-1 teaspoon of dried oregano
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a medium bowl, combine rice, tomatoes, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Mix until ingredients are evenly distributed.
3. Place fish fillets in a greased baking dish.
4. Pour tomato-rice mixture over the fish fillets.
5. Cover baking dish with aluminum foil and bake for 25 minutes.
6. Remove foil and bake for an additional 10 minutes.
7. Serve hot and enjoy!
