Make Tomato Rice Salmon

Tomato Rice Salmon

Ingredients:

-1 cup of long grain white rice

-1 can of diced tomatoes

-1 tablespoon of olive oil

-1/2 teaspoon of garlic powder

-1/2 teaspoon of onion powder

-1/2 teaspoon of dried oregano

-1/4 teaspoon of black pepper

-1/4 teaspoon of salt

-2 salmon fillets

Instructions:

1. Preheat oven to 375 degrees F.

2. In a medium saucepan, bring 1 cup of rice and 2 cups of water to a boil. Reduce heat to low and simmer for 15 minutes, or until all the water has been absorbed.

3. In a medium bowl, combine the diced tomatoes, olive oil, garlic powder, onion powder, oregano, black pepper, and salt.

4. Grease a baking dish with cooking spray. Place the salmon fillets in the dish and top with the tomato mixture.

5. Bake in preheated oven for 15-20 minutes, or until the salmon is cooked through.

6. Serve the salmon with the tomato rice. Enjoy!
