Tomato Spaghetti with Fried Egg
Ingredients:
- 8 ounces of spaghetti
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of diced tomatoes
- 2 tablespoons of tomato paste
- 1 teaspoon of sugar
- Salt and pepper, to taste
- 2 eggs
- Fresh parsley, for garnish
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the diced tomatoes, tomato paste, and sugar. Season with salt and pepper, to taste. Simmer for 10 minutes.
4. When the spaghetti is done cooking, drain and add to the skillet with the tomato sauce. Stir to combine.
5. In a separate skillet, fry the eggs over medium heat.
6. To serve, divide the spaghetti among plates and top each with a fried egg. Garnish with fresh parsley and serve. Enjoy!
