Chicken and Cheese Omelette

Ingredients:

- 2 chicken breasts, cooked and diced
- 2 eggs
- 1/4 cup shredded cheese
- 2 tomatoes, diced
- Salt and pepper, to taste

Instructions:

1. Heat a large non-stick skillet over medium-high heat.

2. Add the diced chicken and tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally.

3. In a medium bowl, whisk together the eggs, cheese, salt, and pepper.

4. Pour the egg mixture into the skillet and reduce the heat to medium.

5. Cook for 3-4 minutes, stirring occasionally, until the eggs are cooked through.

6. Serve the omelette warm. Enjoy!
