Langostino and Tomato Rice
Ingredients:
-1 lb. langostinos, peeled and deveined
-2 large tomatoes, diced
-2 cups cooked white rice
-1/4 cup olive oil
-1/4 cup chopped fresh parsley
-1/4 cup chopped fresh basil
-2 cloves garlic, minced
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the langostinos and cook for 3-4 minutes, until they are lightly browned.
3. Add the tomatoes, parsley, basil, garlic, salt, and pepper. Cook for an additional 2-3 minutes.
4. Add the cooked rice and stir to combine. Cook for an additional 3-4 minutes, stirring occasionally.
5. Serve warm. Enjoy!
