Pasta with Roasted Tomatoes and Garlic
Ingredients:
-1 lb. of your favorite pasta
-2 cups cherry tomatoes, halved
-4 cloves garlic, minced
-2 tablespoons olive oil
-Salt and pepper to taste
-Fresh basil leaves, chopped (optional)
Instructions:
1. Preheat oven to 400°F.
2. Place cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 15 minutes.
3. Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook according to package instructions.
4. When the tomatoes are done roasting, remove from oven and add minced garlic. Stir to combine.
5. When the pasta is done cooking, drain and return to the pot. Add the roasted tomatoes and garlic and stir to combine.
6. Serve warm, topped with fresh basil leaves (optional). Enjoy!
