Penne with Roasted Tomatoes and Garlic
Ingredients:
-1 pound penne pasta
-2 pounds cherry tomatoes
-6 cloves garlic, minced
-3 tablespoons olive oil
-1 teaspoon dried oregano
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine the cherry tomatoes, garlic, olive oil, oregano, salt, and pepper. Toss to combine.
3. Spread the tomato mixture onto a baking sheet and roast in the preheated oven for 20 minutes.
4. Meanwhile, bring a large pot of salted water to a boil. Add the penne and cook according to package instructions.
5. Once the pasta is cooked, drain and return to the pot.
6. Add the roasted tomatoes and garlic to the pot and stir to combine.
7. Serve the penne with roasted tomatoes and garlic. Enjoy!
