Tomato Garlic Pasta

Ingredients:

- 8 ounces of pasta of your choice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.

2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring, until fragrant, about 1 minute.

3. Add the tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes are softened, about 5 minutes.

4. Drain the pasta and add it to the skillet with the tomatoes. Toss to combine.

5. Serve the pasta hot, garnished with parsley, if desired. Enjoy!
