Bean and Tomato Stew

Ingredients:

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cans (15 ounces each) beans, drained and rinsed
- 2 cans (14.5 ounces each) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

3. Add the beans, tomatoes, oregano, and basil. Stir to combine.

4. Bring the mixture to a boil, reduce the heat to low, and simmer for 20 minutes.

5. Season with salt and pepper, to taste.

6. Serve hot. Enjoy!
