Porco with Tomato and Onion
Ingredients:
- 2 tablespoons olive oil
- 2 pounds porco, cut into cubes
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the porco cubes and cook until lightly browned, about 5 minutes.
3. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
4. Add the tomatoes, paprika, oregano, and salt and pepper. Cook for an additional 5 minutes.
5. Reduce the heat to low and simmer for 15-20 minutes, or until the porco is cooked through.
6. Serve over rice or with crusty bread. Enjoy!
