Tortilla de Jamón y Queso
Ingredients:
- 2 large eggs
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 4 ounces of thinly sliced jamón
- 4 ounces of grated cheese (such as cheddar, mozzarella, or a combination)
- 2 tablespoons of chopped pepinillos
- 4 slices of bread, toasted
Instructions:
1. Heat the olive oil and butter in a large skillet over medium heat.
2. Add the jamón and cook until lightly browned, about 3 minutes.
3. Add the eggs and scramble until cooked through, about 3 minutes.
4. Add the cheese and pepinillos and cook until the cheese is melted, about 2 minutes.
5. Divide the egg mixture among the toasted bread slices. Serve warm.
