Tortilla de Patatas con Pimientos y Jamón
Ingredients:
- 4 patatas
- 2 pimientos
- 2 huevos
- 2 cucharadas de queso
- 2 cucharadas de mermelada
- 2 lonchas de jamón
- 2 cucharadas de leche
Instructions:
1. Preheat oven to 350°F.
2. Peel and thinly slice the potatoes.
3. Heat a large skillet over medium heat and add the potatoes. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender.
4. Add the diced pimientos and cook for an additional 5 minutes.
5. In a medium bowl, whisk together the eggs, cheese, and milk.
6. Add the egg mixture to the skillet and stir to combine.
7. Spread the mermelada over the top of the mixture and top with the slices of jamón.
8. Transfer the skillet to the preheated oven and bake for 25 minutes, or until the top is golden brown and the eggs are cooked through.
9. Serve warm and enjoy!
