Tortilla Espagnole

Ingredients:

- 2 tomates, diced
- 4 ounces jambon, diced
- 4 ounces fromage de chèvre, crumbled
- 4 ounces chorizo, diced
- 4 eggs, beaten
- 2 tablespoons olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced jambon and chorizo and cook until lightly browned, about 5 minutes.

3. Add the diced tomatoes and cook for an additional 2 minutes.

4. Pour in the beaten eggs and stir to combine.

5. Add the crumbled fromage de chèvre and stir until the eggs are cooked through, about 5 minutes.

6. Serve warm. Enjoy!
