Ingredients:
- 200g dark chocolate
- 100g roasted almonds
- 100g white chocolate
- 50g bittersweet chocolate
- 1 tsp agar-agar
- 100g almond flour
- 50g rice flour
- 1 tsp baking soda
- 50g cacao beans
Step by Step Guide:
1. Preheat the oven to 180°C (350°F) and grease a cake pan.
2. Melt the dark chocolate in a heatproof bowl over a pot of simmering water. Let it cool slightly.
3. In a food processor, pulse the roasted almonds until finely ground.
4. In a separate bowl, mix the almond flour, rice flour, and baking soda together.
5. In a small saucepan, combine the agar-agar with water according to package instructions and bring to a boil. Let it cool slightly.
6. In a large mixing bowl, beat the bittersweet chocolate until smooth. Gradually add in the almond flour mixture and the agar-agar mixture.
7. Fold in the melted dark chocolate and ground almonds until well combined.
8. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the cake cool completely before melting the white chocolate and drizzling it over the top.
10. Garnish with crushed cacao beans and sliced almonds before serving.
