Tuna and Barley Bowl with Roasted Vegetables
Ingredients:
-1 sweet potato, peeled and cut into 1-inch cubes
-1 potato, peeled and cut into 1-inch cubes
-1/2 head of red cabbage, cut into 1-inch cubes
-1/2 head of cauliflower, cut into florets
-2 carrots, peeled and cut into 1-inch cubes
-1 can of tuna, drained
-1 cup of barley
-2 tablespoons of olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, combine the sweet potato, potato, red cabbage, cauliflower, and carrot. Drizzle with olive oil and season with salt and pepper. Toss to combine.
3. Spread the vegetables onto a baking sheet and roast for 25-30 minutes, stirring halfway through, until vegetables are tender and lightly browned.
4. Meanwhile, cook the barley according to package instructions.
5. Once the vegetables and barley are cooked, combine them in a large bowl. Add the tuna and toss to combine.
6. Serve the tuna and barley bowl with roasted vegetables warm. Enjoy!
