Tuna and Eggplant Casserole

Ingredients:

-1 can of tuna, drained
-1 eggplant, peeled and diced
-1 tomato, diced
-1 can of beans, drained
-1 egg
-Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the tuna, eggplant, tomato, beans, and egg. Season with salt and pepper.

3. Transfer the mixture to a greased baking dish.

4. Bake in preheated oven for 30 minutes, or until the eggplant is tender and the top is golden brown.

5. Serve hot. Enjoy!
