Tuna and Peppers Penne


- 2 tablespoons of olive oil

- 1 red pepper, diced
- 1 green pepper, diced
- 2 cloves of garlic, minced
- 2 tablespoons of harissa
- 2 cans of tuna, drained
- 2 cups of penne pasta
- 2 eggs


1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced peppers and garlic and cook for 3-4 minutes, stirring occasionally.

3. Add the harissa and tuna and cook for another 2-3 minutes.

4. Meanwhile, cook the penne according to package instructions.

5. When the pasta is done, add it to the skillet and stir to combine.

6. Make two wells in the mixture and crack the eggs into them.

7. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.

8. Serve the Tuna and Peppers Penne hot. Enjoy!
