Tuna and Potato Rice Bowl

Ingredients:

- 2 cups cooked white rice

- 1 can of tuna, drained

- 2 carrots, diced

- 2 tomatoes, diced

- 2 cloves of garlic, minced

- 2 potatoes, diced

- 2 slices of bread, toasted

- 2 tablespoons olive oil

- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine the tuna, carrots, tomatoes, garlic, potatoes, and olive oil. Season with salt and pepper to taste.

3. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring occasionally.

4. Meanwhile, cook the rice according to package instructions.

5. Once the tuna and potato mixture is finished baking, divide the cooked rice among four bowls.

6. Top each bowl with the tuna and potato mixture and a slice of toasted bread.

7. Serve and enjoy!
