Tuna and Potato Tortilla

Ingredients:

- 2 large potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can tuna, drained
- 1/2 cup diced chorizo
- 1/2 cup diced gammon
- 2 large tomatoes, diced
- 4 eggs, lightly beaten
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Heat olive oil in a large skillet over medium heat. Add potatoes, onion, and garlic. Cook, stirring occasionally, until potatoes are tender, about 10 minutes.

3. Add tuna, chorizo, and gammon. Cook, stirring occasionally, until heated through, about 5 minutes.

4. Add tomatoes and cook for an additional 2 minutes.

5. In a medium bowl, whisk together eggs, salt, and pepper.

6. Pour egg mixture into the skillet and stir to combine.

7. Transfer the mixture to a 9-inch pie plate.

8. Bake in preheated oven for 25 minutes, or until the top is golden brown.

9. Let cool for 10 minutes before serving. Enjoy!
