Tuna and Rice Aubergine Bake

Ingredients:

- 2 eggs
- 2 cups cooked white rice
- 1 can of tuna, drained
- 2 tablespoons mayonnaise
- Ground pepper, to taste
- Salt, to taste
- 1 aubergine, diced
- 1 cup grated cheese
- 1 tomato, diced
- 1 kiwi, diced

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a large bowl, whisk together eggs, cooked rice, tuna, mayonnaise, pepper, and salt.

3. Spread the mixture into a greased 9x13 inch baking dish.

4. Top with diced aubergine, grated cheese, diced tomato, and diced kiwi.

5. Bake in preheated oven for 30 minutes, or until cheese is melted and bubbly.

6. Serve warm and enjoy!
