Make Tuna and Rice Casserole
Tuna and Rice Casserole
Ingredients:
- 2 cups cooked brown rice
- 2 cans of tuna, drained
- 2 cups of spinach, chopped
- 1 cup of carrots, diced
- 1/4 cup of mayonnaise
- 2 eggs, beaten
- 1 onion, chopped
- 2 potatoes, diced
- 1 teaspoon of Italian mixed herbs
- Salt, to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine the cooked brown rice, tuna, spinach, carrots, mayonnaise, eggs, onion, potatoes, Italian mixed herbs, and salt. Mix until all ingredients are fully incorporated.
3. Transfer the mixture to a 9x13 inch baking dish.
4. Bake in preheated oven for 30-35 minutes, or until the potatoes are tender and the top is golden brown.
5. Serve warm. Enjoy!
