Tuna and Sweet Potato Bake


- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 2 cups spinach, chopped
- 2 cans tuna, drained
- 1 cup tomato sauce
- 1 red pepper, diced


1. Preheat oven to 375 degrees F.

2. Place the diced sweet potatoes in a baking dish. Drizzle with olive oil and season with salt and pepper. Bake for 25 minutes, or until the potatoes are tender.

3. In a large bowl, combine the spinach, tuna, tomato sauce, and diced pepper.

4. Remove the sweet potatoes from the oven and top with the tuna mixture.

5. Bake for an additional 15 minutes, or until the tuna is cooked through.

6. Serve warm and enjoy!
