Tuna and Sweet Potato Salad
Ingredients:
-2 large sweet potatoes
-2 cans of tuna, drained
-1/2 cup of cream
-1/2 cup of diced celery
-1/4 cup of diced red onion
-1/4 cup of diced bell pepper
-1/4 cup of diced cucumber
-1/4 cup of chopped parsley
-2 tablespoons of olive oil
-2 tablespoons of lemon juice
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Peel and dice the sweet potatoes into small cubes. Place on a baking sheet and roast for 25 minutes or until tender.
3. In a large bowl, combine the tuna, cream, celery, red onion, bell pepper, cucumber, and parsley.
4. Add the roasted sweet potatoes to the bowl and mix until everything is combined.
5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
6. Pour the dressing over the salad and mix until everything is evenly coated.
7. Serve the salad chilled or at room temperature. Enjoy!
