Tuna Fish Rice Bowl

Ingredients:

-2 cans of tuna fish
-1 cup of cooked white rice
-1 cup of sweet corn
-1 tomato, diced
-1/2 cup of mozzarella cheese, shredded
-1/4 cup of diced onions
-1/4 cup of diced carrots
-1/4 cup of arugula
-1 tablespoon of grated ginger root
-1/2 cup of diced potatoes
-2 eggs, lightly beaten
-2 slices of white bread, toasted

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine tuna fish, sweet corn, tomato, mozzarella cheese, onions, carrots, arugula, and ginger root. Mix until all ingredients are combined.

3. Grease a 9x13 inch baking dish with cooking spray.

4. Spread the tuna fish mixture into the baking dish.

5. In a separate bowl, combine the diced potatoes, eggs, and toasted white bread. Mix until all ingredients are combined.

6. Spread the potato mixture over the tuna fish mixture.

7. Bake in preheated oven for 30 minutes.

8. Serve warm with a side of cooked white rice. Enjoy!
