Tuna Fried Rice
Ingredients:
-1 cup cooked rice
-1 can tuna, drained
-1 tomato, diced
-2 eggs
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced tomato and cook for 2-3 minutes, stirring occasionally.
3. Add the cooked rice and tuna and stir to combine.
4. Push the mixture to one side of the skillet and crack the eggs into the other side.
5. Scramble the eggs and mix them into the rice mixture.
6. Cook for an additional 3-4 minutes, stirring occasionally, until the eggs are cooked through.
7. Season with salt and pepper to taste.
8. Serve hot. Enjoy!
