Tuna, Olive Oil, and Potato Salad
Ingredients:
- 2 cans of tuna in olive oil
- 2 large potatoes, peeled and diced
- 1/4 cup of olive oil
- 1/4 cup of white wine vinegar
- 2 cloves of garlic, minced
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 350°F.
2. Place the diced potatoes on a baking sheet and bake for 20 minutes, or until tender.
3. In a large bowl, combine the tuna, olive oil, white wine vinegar, garlic, parsley, salt, and pepper.
4. Add the potatoes to the bowl and mix until everything is combined.
5. Serve the salad chilled or at room temperature. Enjoy!
