Tuna Quinoa Bowl
Ingredients:
- 2 potatoes, diced
- 1 green pepper, diced
- 1 onion, diced
- 2 carrots, diced
- 1 cup quinoa
- 2 cans of tuna fish, drained
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. In a large bowl, combine potatoes, green pepper, onion, carrots, and quinoa.
3. Drizzle olive oil over the mixture and season with salt and pepper.
4. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring occasionally.
5. Remove from oven and add the tuna fish.
6. Serve warm in individual bowls. Enjoy!
