Tuna Rice Casserole

Ingredients:

- 2 cups of uncooked long grain white rice

- 2 cans of tuna, drained

- 2 bell peppers, diced

- 2 tablespoons of soy sauce

- 1/2 cup of heavy cream

- 1/2 cup of tomato sauce

- 2 tablespoons of capers

- Juice of 1 lemon

- 1 onion, diced

- 2 cloves of garlic, minced

- 1/2 cup of diced ham

- 2 tablespoons of butter

- 2 tablespoons of olive oil

- 2 tablespoons of pesto sauce

- 1/2 cup of grated cheese

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a large pot, bring 4 cups of water to a boil. Add the rice and cook for 10 minutes, or until tender. Drain and set aside.

3. In a large skillet, heat the butter and olive oil over medium heat. Add the onion, garlic, and bell peppers and cook for 5 minutes, or until softened.

4. Add the tuna, ham, soy sauce, cream, tomato sauce, capers, lemon juice, and pesto sauce. Simmer for 5 minutes.

5. In a large baking dish, spread the cooked rice in an even layer. Top with the tuna mixture and spread evenly. Sprinkle with the grated cheese.

6. Bake for 25 minutes, or until cheese is melted and bubbly. Serve warm. Enjoy!
